🍂 Slow-Cooked Oxtail Casserole with Balsamic Fig Cream and White Beans

Rich, tender, and full of depth, the balsamic fig cream adds a subtle sweetness that perfectly complements the savory oxtail and creamy white beans. It’s hearty, comforting, and unmistakably Autumn.
Ingredients:
- 1½ kg oxtail – pat dry and season
- 4 Tbsp olive oil
- Salt & pepper
- 2 sticks celery – roughly chopped
- 2 carrots – roughly chopped
- 1 white onion – roughly chopped
- 2 tsp dried thyme
- 2 cloves garlic – chopped
- 2 bay leaves
- 1 Tbsp flour
- 1 tsp sugar
- 2 Tbsp balsamic cream with fig
- 125 ml passata
- 625 ml chicken stock
- 1x 410 gm tin white beans (any type)
Method:
- Trim most of the fat off the oxtail
- In a large casserole pot/pan, brown the oxtail in batches on all sides - set aside
- Sauté the onions, carrots, celery, and thyme in the same pan until softened
- Add the flour, stir through then add the garlic, chicken stock, balsamic cream, bay leaves, passata, and sugar - mix well
- Return the oxtail and its juices to the pan, stir well and bring to a boil
- Cover and transfer to a preheated oven (Fan 140 °C). Cook for 3½ – 4 hours, until the meat is fork-tender
- Check the casserole every hour, stir, and add more liquid if needed
- Stir in the tin of white beans just before serving for added creaminess
- Serve with a starch of your choice and crusty bread for dipping!

Serve in wide bowls with rustic bread for soaking up the rich sauce. The flavors deepen beautifully overnight, making it an ideal make-ahead meal for the weekend.
